Why Metapan Produces Exceptional Coffee
Metapan's elevation of 1,000 to 1,300 meters, combined with its climate and volcanic soils, creates ideal growing conditions for balanced specialty coffee. The Pacas and Bourbon varieties develop exceptional sweetness, body, and clarity, resulting in a cup that's approachable enough for everyday drinking while still expressing the character of its origin.
Why Air Roasting Matters
We roast every batch on the Loring S35 Kestrel using clean hot air rather than direct flame — a cleaner roast that preserves the coffee's natural sweetness while eliminating the bitterness and smoky flavors that often hide origin character.

How to Brew
Pour Over (Recommended): 200°F water, 1:15 coffee-to-water ratio, 45-second bloom before finishing your pour. The almond, brown sugar, and milk chocolate undertones become even more expressive as the cup cools.
Cold Brew: Steep at a 1:8 ratio for 18 to 20 hours in the refrigerator for a smooth, low-acid cup with a rounder sweetness.
